Episode 004 - Adam Longacre, Unhitched Brewing
Here it is, our 4th episode of From Scratch by Scratch. This time we've got Adam Longacre of Unhitched Brewing along as a guest. Today we're cooking Pork Schnitzel.
Here's the recipe:
Pork Schnitzel:
4 pork chops tenderized and seasoned w/scratch special seasoning. Coated with flour, eggs, and panko bread crumbs.
Sauce:
Heavy cream-1/2 cup
Cone Prone Beer- 1/2 cup
1 oz corn starch and
1 oz water stirred into a slurry
Sugar- 1/2 tsp Season to taste
Braised Red cabbage-
5 cups chopped Onion-1/2 of an onion chopped
Chopped Garlic-1 tsp
Port Wine-1/2 cup
Balsamic vinegar-1/2 cup
Sugar- 1/4 cup
Dumplings:
2 cups cooked in salted water
Episode 003 - Dan Stansbury, WRQK
In this episode, we're joined by Dan Stansbuury, host of the Stansbury Show on WRQK in Canton, Ohio.. Today, we're making Pan Seared Salmon w/Sautéed Squash Medley and Carbonara noodles.
Here's the recipe:
Salmon 2-8oz pieces with the skin on
Scratch Seasoning
Heat a skillet and place the flesh side down and cook for 3-4 minutes until a golden brown color shows Turn over and place in a 350 degree oven for 12 minutes
Carbonara Noodles:
Papperdelle noodles- 10 oz cooked in salted water and cooled
Heavy cream- 2 cups
Bacon- 2 pieces cut into strips
2 egg yolks
Peas- 1/4 cup Diced onion- 1/4 cup
Salt-1/2 tbsp
Squash Medley:
Slice 1 zucchini and squash into thick slices.
Red pepper cut into sticks
Fresh Dill- 1/2 tsp
Garlic butter-2 tbsp
Scratch seasoning-to taste
In a cold sauce pan, add bacon and cook until all the bacon is brown, add onion, cook until the onion is soft. In a separate container mix the cream and egg yolks. Turn the bacon mixture on low and add the cold noodles, slowly add the cream mixture and peas
Squash Medley:
Sauté all ingredients together

In this episode, the series premiere, We're joined by In this episode, we're joined by Robert Berry of Mr. Berry Studios, a new boutique marketing agency. Today, we're making a delicious Asian-inspired pork belly.
Here's the recipe:
Pork belly: 1 lb pork belly (Score the top of the pork belly top into squares to make sure that the fat renders while baking)
Pineapple juice-2 cups
Soy sauce1/2 cup
Scratch steak seasoning- 1 tsp
Add all ingredients into baking dish And bake at 300 for 3 hours
Dressing/ Sauce
Lemon juice 1 tbsp
Asian Chili sauce-1tbsp
Sesame oil- 1 1/4 tbsp
Rice wine vinegar- 2tbsp
Honey- 1/2 tbsp
Fresh ginger-1 tbsp
Salt-as needed
Slaw:
Bok choy- 1cup
Red pepper- 1/2 cup
Red onion- 1/4 cup
Shredded carrots-1/4 cup
Sushi rice:
1/2 cup rice
1 cup water
1/4 cup rice wine vinegar Soy sauce-3 tbsp

I absolutely LOVE Scratch Steakhouse. I ALWAYS have excellent food and service, whether I dine in or get carryout. Well last night I ordered carryout and had the BEST Prime Rib ever. It was cooked perfectly and literally melted in my mouth. My dog 🐕 even gave it a 5 star rating.

The food at Scratch Steakhouse is nothing short of amazing!!! I’ve been here several times and their steaks are so flavorful, delicious, juicy, and cooked to perfection. I went tonight and got the champagne chicken dish w/ amazing champagne cream sauce, grilled chicken, mushrooms, and shrimp on top. One of the best meals I’ve ever had! Their service is also very attentive and friendly! Thank you Scratch Steakhouse!

My friend took me for my birthday to the Carrollton location the food was fabulous the staff was so friendly even the owner stopped at our table to say hello and introduce himself.
We moved to the little bar after dinner and chatted with employees who recommended different Fall drinks that were amazing. Can’t wait to try the Louisville location

Everything was amazing! Salmon practically melted in my mouth and the house dressing is delicious! Service was on point from the moment we walked into the door until we left. It’s nice to see the staff having such great teamwork. Our server Z was very pleasant and polite. He didn’t miss a thing. Excellent server! We can’t wait to go back!
